Chai tea is an essential drink in Indian culture. The recipe of our Chaï Incroyable was born from a meeting between Sandra Salmandjee alias Sanjee and Compagnie & Co. Creator of Bollywood Kitchen, Sanjee, in the image of her double French-Indian culture, created a cuisine which draws its sources from the Indian tradition, and from the French cuisine.
Its "incredible" side comes of course from its unique taste, but especially from the choice of a black tea from the Assam province. Indeed, Indian Chaï often use teas grown in the south of this immense country. The black tea of Assam, cultivated on the northern plateaus brings more character and strength.
You should not hesitate to add a cloud of hot milk to it, and to drink it sweetened if you wish to live at the Indian time.
