Green teas

The distinction between green tea and black tea comes from a difference in manufacturing: green tea does not undergo fermentation or roasting after picking. This distinction brings notable differences in flavors and benefits, since it keeps all its nutrients.

Green tea is much higher in antioxidants than black tea, but will provide less caffeine to the body.

Benefits of Thé Vert Sencha

Antioxidants, useful to fight against free radicals present in green tea, are numerous: We distinguish among others the side-chins, theaflavins... One cup of green tea provides up to 400 mg of total polyphenols. It is certainly the drink with the strongest antioxidant activity with a power higher than vitamin C.

Numerous scientific studies attribute medicinal virtues to green tea, notably in the prevention of certain cancers, the reduction of the risk of cardiovascular diseases and cholesterol. It is an ideal accompaniment to slimming diets, as it also promotes weight and fat loss.

On the other hand, people who are looking for the famous detox effect, or infusions to help digestion, we prefer to direct them to other herbal infusions such as meadowsweet, hibiscus, or cherry stem.

The origins of Thé Vert Sencha

There are many different green teas, depending on whether they come from China, Darjeeling, Japan or Sri Lanka.

Thé Vert Sencha is originally from Japan, it represents almost 80% of the tea production in Japan but other countries also supply it such as China. It always comes from the tea plant, Camellia sinensis, from which only the buds and the first 4 or 5 young leaves of the branch are harvested. The leaves are then put in a steam bath for a few seconds to avoid natural oxidation, and are gradually rolled into a needle shape. The leaves are often deep green.

Tips for preparation

When preparing the tea, it is not necessary to boil the water, a simmering water (up to 80°C max) is largely sufficient, beyond that, the benefits of green tea may be altered. Moreover, it is important to note that it is during the first three to five minutes of infusion that more than two thirds of its antioxidants are released. 

How to enjoy Thé Vert Sencha?

Prepared in this way, a good natural Thé Vert Sencha reveals a beautiful yellow colored liquor in the cup of tea.

When tasted, it is a drink with a dominant vegetal note, and a pronounced taste of fresh grass or seaweed. Some palates find a certain bitterness. 

At Compagnie & Co, we use certain Thé Vert Sencha to create scented teas such as Sencha Earl Grey, with bergamot aromas; Sencha Printemps with fruity notes of grapefruit and vanilla. 

The famous tea Thé Vert Menthe is always prepared with another variant of green tea: gunpowder.
