What is chicory?
Chicory is a plant with the scientific name Cichorium, native to Europe, North Africa, and the Middle East. It is a herbaceous plant from the Asteraceae family, with several species—some wild, others cultivated (Cichorium intybus). It is well known in culinary use, as it produces salads such as frisée, escarole, and endives.
In France, chicory is also cultivated for its roots, which are used to produce a coffee substitute. This practice became especially popular during times of war, when coffee imports were limited.
Although root consumption was once associated with times of scarcity, the benefits of roots—particularly chicory—are now being rediscovered, and it is increasingly appreciated as a healthy beverage.
Once harvested, chicory roots are crushed and roasted, giving chicory its distinctive flavor, somewhere between caramel and café au lait.

How to prepare chicory herbal tea?

We recommend an infusion time of about 3 minutes, which can be extended if you prefer a stronger, more intense flavor.
What is the difference between coffee and chicory?
As a hot beverage, coffee is made from roasted beans, while chicory is made from roasted roots. Chicory is rich in fiber and minerals, and naturally caffeine-free, meaning it has no stimulating effect—unlike coffee.
