If we translate the word "matcha" from Japanese to French, we simply get the term "tea powder"! As the name suggests, matcha is a powdered tea.

Compagnie & Co's organic matcha is a blend of two green teas, Aracha and Tencha (a species named for the Japanese word for "grinding tea"), harvested in the south of Japan in the prefecture of Kagoshima.

Kagoshima is a city in the south of Japan on the island of Kyushu, often called the Naples of the East because of its location between a beautiful bay and the famous volcano Sakurajima.

The mild climate is very favorable to the cultivation of these green teas which are sought after to produce the best matchas.

The tea leaves are first mixed in secret proportions between Aracha and Tencha, then they are cut and dried. After a resting period, they are passed through a slowly rotating grinder to reduce them to powder.

The secret of a quality matcha lies in this process which requires a lot of time and precision to provide a very airy powder with a beautiful color. Full of health benefits, this product is generally considered a superfood. Before you even get into the methods of making matcha tea, take the time to learn about the benefits of using it. First, matcha is the only tea that comes in powder form. How to prepare matcha tea

You will not find matcha tea in bags to be brewed: it is always sold in powder form. It is never brewed, but is systematically whipped. On average, one gram of powder is required for about 80 mL of water. 

Since matcha is a tea of exceptional quality, it is recommended to avoid preparing it with tap water that is too hard to drink, at the risk of not enjoying all its flavours. Instead, use mineral water or filtered water, depending on your drinking habits.

After heating the water up to 75°C (and no more, otherwise your matcha might be bitter), pour it into the cup over the powder. Then use a chasen (bamboo whisk) or a regular whisk to whisk until you get a slightly creamy texture.

You can also add a splash of milk to your matcha tea, to make it even more flavorful and smooth
